Ingredients: (will make 10 pancakes)
2 eggs
380ml milk
310g self raising flour
100g caster sugar
2 heaped teaspoons baking powder

If you only have plain flour add one extra teaspoon of baking powder.

Use a good quality non-stick pan for best results.

Secret tip: To avoid the surface of your pancake being blotchy, use only a very thin layer of butter or oil in the non-stick pan.
